Lemons Don’t Suck

I’m very lucky to have a very abundant lemon tree in our garden, and they are ripe at the moment. So far we have only used the lemons to squeeze into hot honey lemon drinks when we have been sick, but i started to wonder what can you do with lemons?

Firstly buy some of my favorite lemon coloured twine (you can purchase from the fabulous TeaPea shopHERE), then make this delicious lemon loaf from Glorious Treats. Wrap in their fabulous styling and give to a friend or take on a picnic.

Recipe: Lemon Garlic Spaghetti

Following on from my lemon post the other day, here is a quick , yummy and easy dinner for tonight. A fantastic meal that is sure to impress but has minimal ingredients but pack a huge flavour punch. This recipefrom ‘I nom things’ (cute name huh!) is fantastic, and one to keep up your sleeve for when guest stop by at the last minute or the cupboard is a little low on stock! Try this one, it’s delicious (and vegetarian but don’t tell anyone, they won’t notice hehe).

Ingredients:
4 oz dry spaghetti
1/4 cup grated parmesan
2 tsp olive oil
1 clove garlic
1/2 lemon
2 tbsp pine nuts
5-6 basil leaves, chiffonaded (very fine slice)


Directions:First, start your garlic oil. Pour in olive oil and chopped up garlic into a small frying pan and let it cook over low, until the garlic starts to brown on edges. Immediately remove from heat and reserve.
While that’s starting up, boil up some spaghetti.  Take your basil, cheese and pine nuts and dump it into a large bowl, with the garlic oil, garlic chunks and all. Squeeze in lemon juice. Throw in the spaghetti and toss until well combined. Plate, crack some black pepper on it, and nom.

Trend: Chevron

My favorite top at the moment is a wool white and silver chevron top. It makes me smile, one of those tops that just makes an outfit. I do believe I actually look slightly stylish in it, hehe, well for Nelson standards anyway. DIY: Sugar Scrub

At this time of year my skin, that stuff under all my layers of winter clothes, gets neglected. It turns a pale shade of translucent and quite often a bit dry from sitting far to close to the heater. So here is a little handmade recipe for you to make at home as a rescue for your skin and it will feel divine afterwards!

Ingredients:
1 cup organic cane sugar
1/3 cup sea salt
1/2 cup organic coconut oil
2-3 tablespoons almond oil
1 tablespoon Vitamin E
Lavender Essential Oil (or any other essential oil you like)
Mason Jar or similar from the cupboard

Simply start with a recycled jar, and then add a little bit of the salt, sugar, coconut oil {one at a time to control the consistency} and then add the rest of the ingredients.

Perfect as a wee gift too, simply paint the lid with some blackboard paint (from your local DIY store), and add some ribbon and write on the lid with a white pen. Or cover the lid with some vintage fabric. Beautiful!

Trend: Light Spaces

I’m a little tired of the peach coloured blinds in my rental property, i would love to get my hands into some renovations again. When we did up our 1970’s house in Auckland a couple of years back and I was able to paint crisp white walls, bright and light, with accents of wood and some negative detailing. Having your walls white means you can add colour to your room in the furnishings and change as trends change without having to re-do your entire room fittings! White and wood are classics together, giving a modern yet slightly rustic look at the same time. A little scandinavian looking don’t you think? Here’s a little inspiration for you if you love a clean crisp look to your home. I personally love the long floating wooden shelves in the kitchen shot with the addition of some family art hung underneath.

Right-oh, now off to purchase a lotto ticket so i can buy that house to do up!

Trend: Neon

Hmm, showing my age now when the *ehem* ‘new’ trend is neon…again…for the third time in my lifetime (or maybe more!). But at least this time round the trend setters are actually putting neon colours into some beautifully designed clothing and products instead of reviving 80’s ghastly fashion (i’m thinking Gem…”truly, truly outrageous”). Here’s a little inspiration for you if you can feel you need a little brightness in your wadrobe, personally i’m actually quite liking it. I wonder if Nelson is ready though?

DIY Frosted Doillie Mirrors

I found this DIY over at Papernstitch and i just had to share, i have found the perfect mirror for this at the recycle reclaim depot in Nelson (bargain price too!) and i’m going to attempt this on the weekend to put up in the store (pics to come…this could be funny!).

Here’s the how too, an easy DIY (my favorite kind!).

What do I need? Materials… Mirror (framed or unframed), paper doily, frosted glass finish spray, double-sided tape.

How do I make it?

Steps… 

1. Clean mirror with soap and water to remove any debris or dirt, and let dry.

2. Choose a paper doily that works for the size mirror you have. My doily is about a third of the size of mirror. On the backside of the doily, place double sided tape all over. You will want to overload it with tape so that you can stop the spray from going into areas you don’t want it to be. But you also want to be sure not to put tape over any areas that are suppose to be “open” in the doily. Then turn over and secure to the mirror anywhere you wish. Remember: The area you put the doily, will be the only spot in the mirror you will actually be able to see a reflection when we are done.

3. Place mirror down on flat surface. Shake frosted glass spray according to directions and then spray 7-12 inches away from the mirror in even, sweeping strokes. Thin layers are the best way to go about this to avoid drips and other inaccuracies. Wait for each coat to dry (about 15-10 minutes) before applying the next coat. My mirror took four coats.

4. After the last layer is completely dry, gently remove the paper doily and double-sided tape from mirror. Clean with damp cloth and you are ready to hang.

Mini Rhubarb Crumble Tarts

It must be cold, i eat when i’m cold. And all i can think of is what can i eat that is warm, yummy, wintery food. I can’t go past a yummy crumble, and this recipe from Donal Skehan is delicious! And lucky me i have tonnes of rhubarb in my garden.

Makes 6 tarts
For the tarts
2 Sheets of ready to roll pastry
600g of fresh rhubarb (about 6 stalks)
120g of vanilla sugar
2 tablespoons of lemon juice
2 tablespoon of cornflour
A generous pinch of ground ginger
Zest of 1 lemon

For the crumble
75g Plain flour
75g Jumbo oat flakes
90g light brown Sugar
100g cold butter, cut into pieces

The Method

Preheat the oven to 200oC.

First things first, cut out 6 discs from the pastry to fit into mini tart tins with a removable base.

Press the pastry into the tart tins, poke with a fork all over the base and and blind bake in the oven for 10 minutes until light brown.  Remove from the oven and set aside.

Chop the rhubarb into 2cm pieces and place in a saucepan with the vanilla sugar, ginger, lemon zest and juice. Cook gently until the rhubarb is tender, this should take no more than 5-6 mins.

Mix the ingredients for the crumble together rubbing them together with your fingertips until you are left with chunky crumbs.

Assemble the tarts by spooning 2 tablespoons of the soft rhubarb on top of the pastry cases and then top with a generous amount of the crumble mix.

Place in the oven for 15 minutes until golden brown on top.

Serve straight away with a good dollop of whipped cream or plain yogurt!

Inspiration: Garden Spaces

Hasn’t it been the most beautiful few days, at the top of the south we have been having a balmy 15-16 degrees. Sunshine, not a cloud in the sky, a dusting of snow on the hills, it could be spring! So usually when it gets like this i look at the winter mess in my garden and start thinking i should be doing something with it! I love gardening, even if it’s just popping a few flowers in a pot for the garden table, just something to brighten the place up. My daughter also likes gardening, but she likes pulling out what i have just put in!

If you have the smallest of gardens, a balcony, acres of land or a few steps to your house, you can have a garden. And even if your fingers aren’t particularly green, growing a few simple veggies can be extremely rewarding (+/- the addition of a caterpillar!). I have a few jars and tea cups at home so i got inspiration from some of the pictures below and went to my local DIY store where in the garden section i found quite a few flowers, bulbs and herbs for a few dollars that look really effective. 

I also have a few in-store if your really not green fingered and would like someone else to get their hands dirty instead!
